The Cow’s come home: Sippin Cow to open in Old Town this summer
The third time might just be the charm for Sippin Cow.
The Old Town Bluffton cafe will open at its new location at 36 Promenade St. in the Calhoun Street Promenade this July, after moving just up the road from its original spot at 1230 May River Road to Pepper’s Old Town for a short seven weeks before closing again in September 2015.
Christy Pinkski, owner of the cafe, said the project at this newly constructed, royal blue building is full-speed ahead.
Despite a few holdups — like waiting almost a month for sprinklers to be installed — Pinkski said she plans to have the original menu and rustic style of the former Sippin Cow ready for business in the coming month.
She will also have the cafe’s original staff.
“My goal is to make the new Cow have the same feel as the old Cow,” she said.
The biggest change to Sippin Cow, aside from the amenities of a new building, is the larger seating area for guests.
Pinkski said she will still serve breakfast and lunch, though different hours for the shop were still being discussed, as well as potential new dishes.
“Well, we’ve definitely been experimenting while we’ve been closed,” she said.
In the meantime, Pinkski said she has been catering with the Bluffton Oyster Company.
“I’ve kept myself busy while trying to build a new restaurant,” she said.
Though Sippin Cow made two major transitions in such a short period, Pinkski said she’s not discouraged.
“I’m ready to hit the ground running,” she said.
“I’m excited, I think it will be good.”
