So far, Wild Wing diners have loved her recipe, but can she beat 7 Pepper Sticky?
Less than one short little week stands between a Hilton Head Island woman and a possible win in Wild Wing Cafe’s annual Battle of the Bones contest, which would mean $5,000 and a place on the restaurant’s menu for her.
It would also mean a homecoming of sorts for Wild Wing, which was started on Hilton Head in 1990.
I first wrote about Carrie Hirsch when her recipe for Whoooa-sabi wings made the final four in Wild Wing’s bracket-style contest. When we talked at the end of May, she was about to go up against Asian Spice Bite. In this final week she faces 7 Pepper Sticky, a recipe from Felice Bogus of Raleigh, N.C.
Hirsch’s wing recipe marries a traditional terriyaki flavor with the burn of wasabi, which she evens out with orange zest. Bogus’ wings are marinated in soy sauce, mirin, sake and honey and topped with togarashi, which is a Japanese chili powder.
“The pressure is on for me now,” Hirsch said Tuesday.
Both wings are available this week for Wild Wing diners to taste and vote on, but you don’t have to go to the restaurant or even try the wings at all to vote. You can vote here, if you want.
Online and in-restaurant voting ends Sunday.
