New food truck offers upscale versions of popular fair food
A new food truck is on the scene in Beaufort County.
It’s Only Fair offers higher-end versions of traditional fair food, such as corn dogs, funnel cakes, chicken fingers and hand-cut fries.
Two years ago, friends Pete Izzillo of Hilton Head Island and Amber Bryson of Beaufort, both former Beaufort County paramedics, came up with the plan for a food truck. They designed a truck, had it custom-built in Florida and left their jobs with EMS to develop a menu in the meantime.
“It may seem so simple to think ‘Well, we will just make some corn dog batter and we will be done,’” Bryson said in an email. “It was so far from that simple. The recipe had to be just right, not too sweet and not too salty.”
Izzillo said It’s Only Fair’s food is made with fresh, not frozen food, and everything is cooked to order.
Their next scheduled event is at the Savannah Food Truck Association Festival in Savannah from noon to 6 p.m. June 5 at Emmet Park on Bay Street.
