The Foolish Frog's website mentions that you specialize in preparing several dishes, including yardbirds. What are yardbirds? How do you prepare them?
Yardbirds are a term for chickens that used to run around the farmyard. Classic yardbirds are made with pancetta, roasted poblano peppers and Mexican cheese. On the menu at Foolish Frog, "yardbird" stands for chicken cordon bleu.
What is your favorite dish to make for yourself?
Barbecue ribs. I'm a classically trained French chef, but ribs were always something I loved cooking for myself at home. When we bought The Foolish Frog, we kept the sign that advertised seafood, steak and ribs, so I had no choice but to test my ribs out at my own restaurant.
Is there a food that you can't have in the house because you'll eat all of it?
Chocolate. There's not enough chocolate in the world for me.
What is your go-to source for a recipe?
I don't follow anyone's recipes. I create my own by getting thoughts from visiting different restaurants and from my travels.
What would be your last meal and who would prepare it?
Foie gras and steak or any other organs, and if Julia Child was still alive, I would love to have her cook my last meal.
