What food or drink do you most look forward to during the holidays?

Christmas sugar cookies. When I was a kid, my mom and older sister and I used to make them. Now I make them with my daughters every year.

Favorite cooking tool?

A sharp knife

Funniest/most embarrassing mistake you ever made as a chef?

My first Thanksgiving at The Smokehouse. I had 30 turkeys in the smoker and one of the racks collapsed and took 16 turkeys with it. We had to run around to all the grocery stores to replace them because they were pre-ordered. It turned out OK but was embarrassing and stressful.

What did you have for dinner last night?

Grilled marinated double-cut pork chops with chimichurri sauce, rice and Colombian arepas.

Recipes or wing it?

When baking, I use a recipe. When cooking, I wing it.

Beer or wine?

Beer. I like wine too, but I like the direction beer is moving with all the microbreweries popping up. We've done three beer dinners at The Smokehouse, and we're having another one in January.
