Get your bibs on for the 16th annual Rib Burnoff and Barbecue Fest

It might be impossible to eat everything at the Kiwanis Club of Hilton Head Island's 16th annual Rib Burnoff and Barbecue Fest. But that doesn't mean you can't try.

The festival brings together about 20 professional cooks and amateur grillmasters to make a variety of ribs and barbecue on May 19 at the Coastal Discovery Museum at Honey Horn. There will be a lot to take in, so we're offering up five tips for how to have an enjoyable afternoon at the festival.

1. DON'T GET DISCOURAGED

Don't feel defeated if you only make it though half the options. Each sample contains several ribs or a healthy offering of barbecue. So after about seven servings, most visitors fill up. "I've seen several couples try them all," said organizer Bob Giroux. "But that's between two of them."

2. HAVE YOUR SAY

It's fun enough to chomp down on ribs. But then you get to vote for your favorite. The People's Choice vote has categories for best in ribs and barbecue, split between the amateur and professional participants.

3. TRY THE FAVORITES

Make sure to try these two favorites: One Hot Mama's was last year's judges' choice for best barbecue; Montana's came in second in both the best ribs and barbecue judges' vote and claimed first for best ribs from the people.

4. CHECK OUT OPTIONS

Don't worry about it if you don't like ribs. Hot dogs and ice cream also will be available for purchase. Or, just grab a beer or some wine and watch The PortaJohns play.

5. STUFF YOUR FACE

Don't think about it as stuffing your face. Think about it as stuffing your face for charity. The festival raises about $8,000 for about 20 nonprofit organizations, such as The Children's Center, The Deep Well Project, Volunteers in Medicine and Programs for Exceptional People.
