Oh how I wish I had given out more candy at Halloween. It would have meant there'd be less for me to snack on right now. No harm, I guess. The candy reminds me of my childhood and the fun we had dressing up.
We didn't wear costumes. We dressed up in our parents' clothes and we chose the houses where we knew the treats were going to be good. Our neighbors knew us by voice back then -- isn't that something?
Even though I'm still in the Halloween mode, my thoughts are turning to Thanksgiving. As I plan our holiday menu, my focus will not be on the vegetables, but on the cornbread dressing.
Cornbread dressing has always been a favorite of mine. Mama made it the best. I used to watch her prepare it so I could make it for my children. I wanted them to say "This is just like Grannana's."

CORNBREAD1 cup self-rising cornmeal
2 cups self-rising flour
1 cup buttermilk
1/2 cup Crisco oil
2 tablespoons sour cream
1 stick butter, melt in bread pan
Preheat oven to 375 degrees. Mix together cornmeal, flour, eggs, buttermilk, Crisco oil and sour cream. Add melted butter from bread pan. Mix well. Pour mixture into 9-inch-by-13-inch pan and bake until brown.

CORNBREAD DRESSING WITH A SPICY FLAIR2 sticks butter
1 cup onions, chopped
1 cup celery, chopped
1/2 cup jalapeno peppers, finely chopped
5 cups cornbread, crumbled
1 teaspoon ground sage
1 teaspoon ground thyme
2 eggs, slightly beaten
1 1/2 cups chicken broth
Preheat oven to 375 degrees. Melt butter in bread pan. Saute onions, celery and jalapeno peppers in pan with a little oil over low heat. Remove from pan and add to crumbled cornbread, Add seasonings. In separate bowl, beat eggs and add to mixture. Using chicken broth, mix all ingredients and pour into bread pan. Bake for about 40 minutes.
