What meal do your clients ask you to cook most for them? Breakfast, lunch or dinner?
Dinner. Most clients are interested in a restaurant-quality meal with the comforts of home.
Who hires a personal chef? People who say they can't cook? Busy people? People with dietary restrictions?
All of the above. People with desire to eat healthy, delicious meals, those who prefer to spend quality time with family and friends (and share a home-cooked meal without having to spend time cooking and cleaning), those who don't have time to plan, shop, cook and clean up, people with special dietary needs (those who are dieting and need help with portion control), tourists, and even those who are just bored with dining out or fast food.
What are some food trends you're seeing for people eating at home?
Farm-to-table is in high demand. Many desire organic and local.
Do you mostly cook from recipes or wing it?
I have many recipes I like to use, most of which I have modified. I do, however, enjoy "winging it" when I have a client who is looking for something new, something different (and, of course, when I cook for my family).
If you were to hire a personal chef for yourself, what would he or she cook for you?
Homemade pierogies and chicken paprikash. These are dishes my grandmother would spend the entire day making when I was a child. These are meals I love but rarely have the time to re-create for my family.
