Pastrami. It reminds me of New York, which is where I'm from.
What is the perfect meat-to-bread ratio for a sandwich?
I think if you have too much meat, it ruins the sandwich. We use about a quarter pound on every sandwich. I think that's perfect, but some people say it's still too much.
What's the story behind the Rose Dhu Works Burger?
The Rose Dhu Works burger started right when we opened the deli. Rose Dhu Creek Plantation was just being developed and the developers always came in and ate cheeseburgers, so we named it after them. They also talked my wife and me into buying a piece of property where we built a house a year ago. So it's a pretty special name. The majority of our sandwiches are named after places in Bluffton.
Proudest kitchen discovery/chef moment?
When my 10-year old son said he wanted to be a chef.
Drink/food you can't live without?
Good bourbon and potato chips. I'm a deli guy so I can't go without potato chips!
