Stokes: Nicer days are around the corner for the Lowcountry

With the time change, increasing daylight and rising temperatures will begin to initiate spring's rebirth around the Lowcountry.

The promise of better days adds a more lively step to the walk of Lowcountry residents. Friendly attitudes become evident. Retailers and the general populous are rejuvenated, and their attitudes welcome change.

It may be the challenge to be done with the cold and welcome the sun. Whatever the reason, the Lowcountry spirit is alive and well and living in Beaufort County. If you have doubts, have coffee on the patio, take a walk along the beach, visit area shops or simply take a stroll along the waterfront.

It's here, folks, and things can only get better from this point.


Hilton Head Island Sportfishing Club: The club's monthly meeting will be about the upcoming cobia season. The meeting will be March 12 at the Yacht Club of HHI in Palmetto Bay Marina. Among the topics will be how to help manage this fishery with instructions on tag and release, and how to improve broodstock collection and safely take DNA samples. SCDNR Law Enforcement Division will explain the latest regulations and "gamefish" status. Aaron Dowling, owner of Bluffton Marine Sports and Supply, will showcase the newest tackle and equipment. Beaufort Sportfishing and Diving Club: The club will meet March 14 at the Beaufort Yacht and Sailing Club off Meridian road on Lady's Island. Social starts at 6:30 p.m., with the meeting at 7. Capt. Charlie Beadon, guide at Oldfield Plantation, will discuss techniques, baits and temperature preferences for redfish, flounder, trout, and sheepshead during late winter and early spring. Rods, reels, line and various setups will be displayed as well. Guests are welcome, and no reservation is required. Details: 843-522-2020

While driving in Augusta recently, all traffic slowed due to an Amish carriage. The driver of the carriage obviously had a sense of humor. As I passed, I couldn't help but notice a triangular sign attached to the back of the carriage that read "Energy efficient vehicle: Runs on oats and grass. Caution: Do not step in exhaust."


Spottail Bass & Potatoes

Ingredients: 2 lbs. red potatoes, 2 lbs. Bass Fillets, 1 Sweet White Onion (Thinly Sliced), Bread crumbs, buttermilk, butter, ground pepper, salt, parsley, lemon juice, grapeseed oil.


Boil potatoes and onion together. When fully cooked, strain and dry. Mash with butter and add buttermilk. Add fillets to frying pan with grapeseed oil. Season with salt and pepper. Sprinkle with parsley and cover with melted butter. Squeeze lemon juice over fillets. Cover and fry for 5 minutes (max). Remove fish and drain.

Place fillets in glass baking dish, and top with potato mixture. Add a few pats of butter and sprinkle with bread crumbs. Add pepper to taste. Place in oven under grill to brown.

Serve with fresh tomato slices over iceberg lettuce with sweet pickles. Add sourdough biscuits and sweet tea for a delightful taste of the Lowcountry.
