Literacy Volunteers of the Lowcountry held its annual Cook & Books fundraiser last weekend, where visitors chatted up Lowcountry authors and ate samples from local restaurants. The Chart House won the People's Choice Award for their Crab Parfait, and the folks at LVL were kind enough to send over a recipe.

Check it out below:

Crab Parfait
2 ounces corn bread
2 ounces green tomato salsa
2 ounces jumbo lump crab
1 teaspoon sherry scallion cream
1 teaspoon scallion garnish
In a martini glass layer ingredients as listed. Make sure that all ingredients are chilled. And serve.

Green Tomato Salsa
1 pound green tomatoes 1/4 inch dice
Half pound sweet onions
1 tablespoon jalapeno peppers
2 tablespoons cilantro
Half pound red peppers
1/4 cup apple cider vinegar
1/4 cup extra virgin olive oil
 
Procedures
mix all ingredients until well incorporated.

Sherry Scallion Cream
1 cup mayonnaise
1/4 cup dry sherry (use the brand that you like)
1/4 cup green onions sliced an 1/8 of an inch
2 tablespoons Creole mustard
1 tablespoon sugar
Procedures
Puree all ingredients in a food processor.

Cornbread
1 pound corn bread mix
1 cup cheddar cheese
10 ounces water
2 eggs

Procedures
Mix all ingredients in a kitchen aid. Transfer to a casserole dish and bake for 45 minutes.
